✅ The creamy, mild and sweet flavours of Emborg's Whip Topping are excellent on their own and also when combined with a wide range of other flavours.

✅ Emborg Whip Topping has a mild, pleasant, sweet aroma. But it can be given a sharper, more precise flavour simply by adding salt and lemon when the Whip Topping is being whipped to a 75-90% over-run.

BENEFITS

The sorbitol content in the non-dairy Whip Topping confers the following benefits.

  • It makes it sugar-free, leaving a slightly sweet aroma, lending itself perfectly to all flavour profiles.
  • It absorbs humidity from the air, leaving the iced cake moist and giving a smooth mouthfeel and flavour profiles in final applications. It also prevents cracks and unwanted lines from appearing on surfaces or rosettes.
  • It inhibits bacteria growth, compared to regular sugar.

EXCELLENT YIELD

Emborg Whip Topping has an excellent yield with four times greater volume once whipped.

Achieve even greater yield with the addition of 20% water to the Whip Topping volume, a big advantage to business cost without compromising the quality of the final product.

CULINARY TIP: Keep the Emborg Whip Topping as cold as possible for the best yield results.

THE PERFECT FINISH

Whipped to its desired over- run, Whip Topping is pleasingly smooth and easy to work with. It is extremely versatile for numerous applications from dessert filling to cake icing.

When cakes and desserts are placed in chillers or sales displays, the whipped topping will settle and remain stable for at least 72 hours. This means that its texture firms up without cracking, while keeping its smooth mouthfeel and superior flavour release properties.

SUITABLE FOR DECORATIONS

If overwhipped to firm peaks, Whip Topping can be used for small surface decorations such as rosettes on top of icing.

SERVING TIP

Mix 300g fruit puree and 70g sugar to 1L of Emborg Whip Topping for a delicious, flavoured topping or filling. Alternately, mix Whip Topping with fruit syrups without additional sugar.
